Super Bowl Spinach Artichoke Dip

It’s Super Bowl time and I’m here for the food! I’m here for the commercials and half time performance too. Isn’t that what the Super Bowl is all about anyway??

Spinach Artichoke Dip is one of my all time favorite dips. I’ve adapted this recipe from the Food Network and it is a winner. So delicious and also cuts out some of the calories found in regular spinach artichoke dip.

Anything containing spinach and artichoke is totally healthy, right?! 😉

Spinach Artichoke Dip

10 ounces baby spinach

1 package of basil

3/4 cup cannellini beans drained

6 ounces Neufchatel cream cheese

1 clove garlic

1/2 cup chicken broth

1 14 oz can artichoke hearts drained and finely chopped

1/4 cup shredded parmesan cheese

1/2 cup mozzarella cheese

1/2 tsp worcestershire sauce

1/2 tsp salt

1/8 tsp black pepper

Top with 1/4 mozzarella cheese

Preheat oven to 450 degrees. Bring a pot of salted water to a boil. Stir the spinach and basil in the water for 30 seconds until wilted. Transfer to a bowl of ice water then drain and pat dry. Puree the cannellini beans, cream cheese, garlic and chicken broth in a food processor. Transfer to a bowl and add spinach/basil mix, artichokes, and cheeses. Mix together along with the salt/pepper and worcestershire sauce. Bake in a 1-quart casserole dish topped with remaining 1/4 cup mozzarella cheese for 20-25 minutes. Serve warm with chips.
