Chicken Pasta Salad Recipe

Warmer weather is upon is which means yummy pasta salads are the perfect go-to meal. I have been in love with this Chicken Pasta Salad for a long time. This is my mom’s recipe and it is fresh, healthy and delicious. I made this today to give to my brother and sister-in-law who recently had their first baby. This is such a good healthy meal option to bring to a family with a newborn. The best part is you can easily throw it in a Ziploc bag for easy transportation and whoever you’re giving it to doesn’t have to worry about returning a pan or Tupperware. Deliver it with bread and a little treat. Easy peasy!

Chicken Pasta Salad

  • 6 cups chicken cooked and diced
  • 16 ounces bow tie pasta cooked as directed
  • 1 cup mayonnaise
  • 8 ounces coleslaw dressing
  • 1 bunch green onions
  • 3-5 apples diced
  • 15 ounce can pineapple tidbits drained
  • 1 lb. sliced grapes
  • 1 cup diced celery
  • 1/4 cup slivered almonds

Combine the cooked chicken, cooked pasta, mayo, coleslaw and green onions. Chill overnight. Add the remaining ingredients. Eat as is or in pita bread.

*I cooked my chicken using my Instant Pot and it is the only way I will ever cook chicken now! So easy and turns out perfect every time. I threw in 3 large chicken breasts along with 1 can of chicken broth, salt and pepper. I set it on high pressure for 10 minutes. Voila!

I ate this salad for lunch and it brought back so many memories of warm summer days. This will be our go-to meal all summer long. I love how it makes a huge batch that will last for a good week. Leftovers are my jam!
